BEEKEEPING
Leader: Mark Manis
Assist. Leader: Karen Andersen
This group will be both a hands on and curriculum based learning experience. We want to invite all members interested in learning about Bee's: hives, behaviors, social structures, brood production, wax and honey harvesting, keeping a bee hive, laws and regulations to come and join our group! We will be meeting in Lakeside, at either the community center, or Library on the Second Saturday of each month, for 1 to 2 hours depending on the assignments/field excursions planned. Primary's are invited to join us for the learning experience at the library, but will not be permitted to go into the field until they are at least at the Intermediate level, for safety reasons.
Each member attending the field excursions must be cleared by the group leaders to participate; this judgment will be at the sole discretion of the Group Leaders, and limited on a per case basis for safety reasons. You MUST know if you are allergic to bee stings, and have been stung by a bee at least twice in the last 5 years to participate in this portion of the project.
Our hope is to adopt a hive, and work with an established colony while learning under the tutelage of an experienced Bee Keeper. We have a goal of collecting and entering honey to be judged at the Del Mar Fair in 2016.
Along with the established hive, we plan on building our very own 4H Hive, and building our own colony from the beginning on up.
Even if you are not able to do field work with the hive, you are still invited to participate in all the surrounding activities and work with the tools, and handle products the bees provide, at the classroom sessions.

COOKING
Leader: Roberta Price
Assist. Leader: Debra A Shaub
This project is intended to teach techniques for healthy eating. We emphasize cooking meals, and learning skills necessary for cooking meals. In the past we have canned cranberry sauce, made a roux and cooked gravy and mashed potatoes (from scratch), celebrated Lunar New Year with a stir-fry (using knife skills), and baked a strawberry shortcake to welcome summer (we even whipped cream ourselves).
In the coming year, I would like to continue developing basic skills for independence in the kitchen. We avoid using packaged products and emphasize fresh, healthy cooking. Members with dietary restrictions are welcome -- I am willing to incorporate any type of allergy or limitation, including gluten-free diets. However, I also encourage members to try new foods (including the dreaded mushroom!) in their cooking.
All levels of members are welcome, but parental participation is encouraged for members who need additional supervision around knives and fire.

POULTRY
Leader: Christian A. Diaz
Assist. Leader: Heather Warner
About Me: I've been around livestock/poultry since I was born. I was raised on a ranch in Mexico and showed 4H/FFA in the states as a kid. I’m an alumni of Sagebrush 4H and El Capitan FFA. My animal projects included, pocket pets (rats, mice and hamsters), cavies, rabbits, poultry, swine, sheep, cattle, and goats. I also participated in public speaking and parliamentary procedure competitions. After high school, I studied Animal Sciences at Colorado State where I got some experience with the commercial side of things. One summer I was a sales rep for the Swine East Division of ELANCO Animal Health. As far as poultry goes I currently raise American Seramas mainly and a few Plymouth Rock Bantams. I show all over the west coast and a show or two in the East. I look forward to sharing the knowledge I’ve gained over the years with the families involved in our group. About the project: We will be following the 4H poultry curriculum mostly with some adjustments based on age (primary, junior, intermediate, and senior). It’s a wonderful, comprehensive course that builds on itself in an easy to understand and fun way. Over the year we will cover topics such as selection, husbandry, showmanship, reproduction, and also some of the commercial side. It’s important to note that our focus will not be solely exhibition poultry for the fairs. We want our group to stand out in the county for their well-rounded knowledge of poultry. There will be opportunities for the families to travel to poultry shows with me, as well as breeder farm tours etc. Be prepared for a great year of FUN!
